The decanter helps us to maximise
the yield from a scarce resource,
while also helping us maintain
the freshness and fruit purity
that defines the
flavour of Sauvignon blanc.
By replacing traditional winemaking technology
to modern centrifugal separation,
this means that the juice can
go directly from the decanter,
straight to fermentation.
And this really simplifies and cuts down
some key winemaking processes.
In effect, this means that three key
winemaking processes become just one.
And that, of course, has a really
fantastic impact at the winery
on reducing our footprint.
Unlike when using traditional presses,
Alfa Laval Foodec technology
does not result in any loss of colour.
With the Foodec decanter, you
can process the grape inputs gently,
avoiding any grinding or abrasion
that results in excess of phenols.
What I personally like best about
decanter technology
is the freshness of the juice
that we get from the decanters
and the reduction in oxidation.
And these are two really key components
to making really classic styles
of white wine that retain their freshness
and have that flavour of the vineyard.
In recent years, New Zealand's
winemakers have made
their mark on the international scene
with distinctive wines,
notably the renowned Sauvignon blanc.
